Coral Tooth Butter Sauté

A simple butter sauté that lets Coral Tooth's delicate, branching texture speak for itself.

Ingredients

  • 200g Coral Tooth mushroom, gently pulled into smaller clusters
  • 2 tbsp butter
  • 1 small shallot, finely chopped
  • Salt and black pepper
  • A few chives, chopped

Method

  1. Melt the butter in a pan over medium heat until foaming.
  2. Add the shallot and cook for 1 minute until softened.
  3. Add the mushroom clusters and cook for 5–6 minutes, turning gently, until golden.
  4. Season with salt and pepper, finish with chives.

Coral Tooth’s delicate, branching texture is easily overwhelmed by strong flavours — a plain butter sauté is usually the best way to taste why it’s worth growing.

Storage: Keeps in the fridge for up to 4 days; best reheated gently in a pan.
